Bunnyville Distillery is committed to pushing the boundaries of whisky innovation, continuously exploring new flavor possibilities through diverse and exceptional oak cask maturation methods, including sherry casks, rum casks, and liqueur casks. The "Plum Cask-Matured Single Malt Whisky" perfectly embodies this spirit. This whisky employs a double oak cask maturation process, layering oak to create unprecedented depth and complexity, delivering a unique sensory experience.
The process begins with maturing plum liqueur in select oak casks, allowing the oak to fully absorb the unique sweet, salty, and slightly smoky flavors of plum. Once the casks are fully infused with the plum flavors, Bunnyville single malt whisky is added for a second maturation. Over time, the whisky gradually blends with the distinctive character of the plum, resulting in a smoother, more refined, and balanced body.
This whisky presents a bright golden amber color, with aromas of ripe plum, dark molasses, subtle smoke, and oak, accompanied by a delicate touch of salty fruitiness. Upon entry, the initial taste is a rich malty sweetness, which transforms into a delightful interplay of crisp plum acidity and honey-like warmth. The finish is smooth and lingering, with layers of saltiness and smoky oak unfolding gently on the palate, leaving a profound and elegant impression.
Whether enjoyed neat, on the rocks, or with a touch of water to reveal its delicate nuances, Bunnyville Single Malt Whisky – Plum Cask Finished – delivers an unforgettable drinking experience. This whisky perfectly blends traditional whisky-making techniques with the distinctive character of oriental fruits, showcasing a bold yet harmoniously balanced flavor artistry.
